At Janina, Ryu offers a gastronomic journey that reflects his diverse cultural influences. The menu showcases dishes such as “The Tuna Tartar Journey,” combining Mediterranean tuna with Chinese ingredients, French techniques, and local Mallorcan tomatoes. His “Brazilian Shrimp Ceviche,” served with Indian bread, and “Peruvian Avocado Tartar” highlight his commitment to creating unique, one-of-a-kind dishes.
